Ingredients

1 large unpeeled purple eggplant , trimmed and cut into 1/8-inch thick slices

1 tablespoon whole milk

Instructions

1.Sprinkle both sides of eggplant slices with sea salt, and let sit for about 1 hour until they release some of their liquid. Rinse and pat the eggplant dry with paper towels.
2.Preheat oven to 375°F (190°C).
3.Beat eggs and whole milk together in a bowl. Put bread crumbs in a separate bowl.
4.Dip eggplant slices in egg mixture, then in bread crumbs to coat. Repeat dipping in egg mixture and then in bread crumbs to double coat.
5.Heat olive oil in a large skillet over medium heat.
6.Fry a few eggplant slices in hot oil until golden brown, about 2 minutes per side. Drain on paper towels. Repeat frying remaining eggplant slices, adding more oil as needed.
7.In a baking dish, layer fried eggplant slices, chopped basil, and smoked mozzarella. Sprinkle with grated Parmesan cheese.
8.Bake in preheated oven until cheese is melted and bubbly and eggplant is tender, about 15 minutes. Let cool slightly before serving.
