Ingredients

2 pounds eggplant
Salt
1 1/2 cups all-purpose flour
3 cups Italian breadcrumbs
6 large eggs
1/4 cup grated Parmesan cheese
4 cups marinara sauce
1 pound fresh mozzarella cheese, sliced
Fresh basil leaves

Instructions

1.Preheat the oven to 375F.
2.Slice eggplant into 1/4 inch rounds. Place in colander and sprinkle with salt. Let stand for 30 minutes.

4.Set up 3 stations: seasoned flour, beaten eggs, and seasoned breadcrumbs.
5.Dip the eggplant slices first in the flour, then in the egg and finally in the breadcrumbs.
6.Arrange eggplant slices on greased baking sheets.
7.Bake for 10-12 minutes, flipping halfway through until golden brown.
8.Spread 1 cup of marinara sauce on the bottom of a baking dish.
9.Add a layer of eggplant, followed by another cup of sauce and a layer of mozzarella cheese. Repeat layers until ingredients are used up. Top with Parmesan cheese.
10.Bake in preheated oven for 30 minutes or until bubbly and golden. Let stand for a few minutes before serving. Garnish with basil.
