1 large eggplant
3 medium lemons , juice of
1/4 cup bottled tahini
2 garlic cloves , minced
2 tablespoons parsley , finely chopped , divided
salt

Instructions

1.Preheat an oven to 400 F.

6.Taste and adjust seasonings as needed.
7.Transfer the dip to a serving bowl and sprinkle with the remaining parsley and paprika. Serve with pita bread or vegetables for dipping.
