Ingredients

2 large flaska aubergines
2 eggs
1/2 kg kefalotiri , grated
1 teaspoon baking soda
1 1/2 cups breadcrumbs
salt
pepper
1 onion
breadcrumbs , Double-baked , for frying
Originated in Greece, these Eggplant Croquettes are a classic and delicious appetizer, side dish, or meal for vegetarians. It is popular globally for its crispy texture and creamy flavor that pleases everyone’s taste buds. These croquettes are usually served with either spicy sauce or yoghurt sauce on top, depending on the individual’s preference. Instructions

1.Cut your aubergines into medium-sized pieces and place them in boiling salt water for 10 minutes.
2.In another bowl mix eggs, baking soda, kefalotiri (keep some for rolling the croquettes), salt, pepper and finely chopped onion.
3.Once the aubergines are done, pour out the water, chop them and mix them in with the egg mixture.
4.Let the whole mix rest for half an hour so the aubergine juices will blend with the rest of the ingredients.
5.Roll the croquettes into small oblong shapes and coat with breadcrumbs.
6.In a deep fryer or frying pan heat up some oil and deep fry until golden brown.

PROS

These Eggplant Croquettes are a great vegetarian option for any meal or potluck.
Not only are they delicious and crispy, but rich in dietary fiber and potassium.

CONS

While it’s great to have a vegetarian option these croquettes are deep fried with breadcrumbs leading to high fat and calorie content which must be enjoyed in moderation.
