Ingredients

5 Chinese eggplants
3 tablespoons peanut oil
1 tablespoon sesame oil
ginger , fresh , 1 inch piece
1 red chili pepper
1/2 cup chicken broth
3 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon brown sugar
1 tablespoon cornstarch
1 tablespoon sesame seeds
cilantro leaf ( to garnish )
salt , to taste
black pepper , to taste

Instructions

1.Cut the eggplants in diagonal shapes and sprinkle salt over them. Keep them aside for 30 minutes.

3.Add eggplants and cook them for 5 minutes until they become soft and get a brownish color.
4.Mix rice vinegar, soy sauce, chicken broth, brown sugar and cornstarch until it becomes a smooth paste.
5.Pour this mixture over the eggplants and let it cook for 2 more minutes.
6.Sprinkle salt and pepper according to preference.
7.Add sesame oil and stir for 2 minutes then remove from heat.
8.Garnish with cilantro before serving.
