Ingredients

1 large eggplant
2 medium tomatoes ( on the vine or hothouse )
1 green bell pepper
1 large yellow onion
1 can diced tomatoes ( unsalted , with basil , garlic , and oregano )
1/4 teaspoon red pepper flakes
1 1/2 teaspoons salt
5 fresh garlic cloves
Eggplant, also known as aubergine, is a popular vegetable in the Mediterranean diet. This Eggplant (Aubergine) Salad-Caviar is a delicious way to enjoy this versatile vegetable. The salad-caviar is made with chopped eggplant, onions, peppers, and tomatoes, and is seasoned with garlic, red pepper flakes, and herbs. Instructions

1.Rinse the eggplant and trim off the stem.
2.Cut the eggplant into small cubes and put it into a colander. Season with 1 teaspoon of salt and leave it for 20 minutes.
3.Rinse the eggplant under running water and squeeze out any excess water with your hands.
4.Heat 3 tablespoons of olive oil in a large skillet over medium heat. Add the chopped onion and diced pepper and sauté until soft, about 5 minutes.
5.Add the diced tomatoes and garlic. Cook the mixture for about 5 minutes, stirring occasionally, until the tomato juice has mostly evaporated.
6.Add the eggplant cubes and canned diced tomatoes to the skillet. Season with red pepper flakes and 1/2 teaspoon of salt.
7.Cover the skillet with a lid and cook the salad for about 20-25 minutes over low heat, stirring occasionally, until the eggplant is tender.
8.Remove the skillet from the heat and let it cool down. Add more salt and pepper if needed.
9.Serve the salad-caviar with a drizzle of olive oil and sprinkle of chopped parsley or basil.
