Ingredients

2 large eggplants
1 cup breadcrumbs
1/2 - 3/4 cup of good quality parmesan cheese or 1/2-3/4 cup pecorino romano cheese
2 eggs , beaten
1 teaspoon garlic salt
1 teaspoon oregano , rubbed between palms
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup olive oil

Instructions

1.Preheat oven to 225 degrees C (425 degrees F).
2.Cut the eggplants into small pieces and put it in a colander.
3.Sprinkle with salt, toss well and let it sit for 20-30 minutes.
4.Rinse the eggplant pieces well with water, and pat dry with paper towels.
5.In a small bowl, mix breadcrumbs, cheese, garlic salt, oregano, salt, and black pepper.
6.In another bowl, beat the eggs well and toss the eggplant pieces in the beaten eggs until well coated.
7.Add the breadcrumb mixture to the eggplant mixture and stir gently until well combined.
8.Heat the olive oil in a large skillet over medium-high heat.
9.Using a tablespoon scoop, shape the eggplant mixture into small patties and place them in the skillet.
10.Cook for 3 minutes until golden brown on both sides.
11.Transfer the eggplant patties to a wire rack or paper towels to drain excess oil.
12.Serve hot with your choice of dipping sauce.
