Ingredients

2 eggplants , 1-1/2 lbs . each
1 1/2 lbs ground beef
2 tablespoons butter
2 medium onions , chopped
1 can tomato paste
3 tablespoons water
2 tablespoons parsley ( chopped )
1 teaspoon allspice
1/4 teaspoon pepper

2 tablespoons flour
2 cups milk
4 eggs

Instructions

1.Slice the eggplants and sprinkle with salt. Leave for 30 minutes and then rinse them with water and pat dry with a paper towel.

7.Layer the eggplant slices in the bottom of a 9x13 inch baking dish. Pour the meat mixture over the eggplant, spreading it evenly.
8.Bake uncovered for 30 minutes.
9.In a separate saucepan, melt 1/4 cup of butter over medium heat. Add the flour and stir until smooth. Gradually add the milk, stirring constantly until thickened.
10.In a separate bowl, beat 4 eggs and stir in 1/2 cup of parmesan cheese, salt, and pepper. Add the egg mixture to the milk mixture and stir until well combined.
11.Pour the milk and egg mixture over the meat layer. Return the dish to the oven and bake for another 45 minutes or until golden brown and set.
