Ingredients

1 large eggplant , peeled and cut int 1/2 inch slices
cooking spray
1 can stewed tomatoes
4 ounces feta cheese , crumbled ( about 3/4 cup )
1/2 cup fresh parsley , minced
1/4 cup fresh cilantro , minced
3 large eggs , beaten
1 large onion , finely chopped ( I used red )
1/2 teaspoon salt ( to taste )
1/4 teaspoon black pepper ( to taste )
1/4 teaspoon ground allspice
1/4 teaspoon dry oregano
1/4 teaspoon ground sage
1 pinch cayenne

Instructions

1.Preheat oven to 350°F.

4.Add canned stewed tomatoes, parsley, cilantro, salt, black pepper, allspice, dry oregano, ground sage, and cayenne. Cook until heated through.
5.Pour half of the tomato mixture into a casserole dish.
6.Layer the baked eggplant over the tomato mixture.
7.Pour the remaining tomato mixture over the eggplant.
8.Sprinkle feta cheese on top.
9.Pour beaten eggs over the top of the casserole.
10.Bake for 35-40 minutes or until set and golden brown on top.
