Ingredients

3 lbs eggplants
1 tablespoon salt
2 teaspoons salt

2 tablespoons pomegranate syrup

Eggplant and Pomegranate Stew is a traditional Middle Eastern delight that's rich in flavors and textures. This recipe combines the sweetness of pomegranate syrup with the savory taste of lamb or beef, making it perfect for meat lovers. Instructions

1.Slice the eggplant into rounds and sprinkle with a tablespoon of salt. Let sit for 30 minutes before wiping off the salt and slicing into cubes.
2.In a large pot, heat 2 tablespoons of vegetable oil over medium heat. Add the ground lamb or beef, black pepper, and allspice. Cook until the meat is browned and fully cooked.
3.Remove the meat and set aside. In the same pot, add the remaining 2 tablespoons of vegetable oil and sauté the onions and carrots until they begin to soften, around 5-7 minutes.
4.Add the bell pepper, garlic, tomato paste, and eggplant. Stir to combine everything and cook for another 5 minutes.
5.Add in the cooked meat, pomegranate syrup, and dried mint and stir. Pour in enough water to cover the vegetables and meat.
6.Bring the stew to a boil, reduce heat to low and let it simmer for 45 minutes to an hour until the vegetables are tender and the stew has thickened up.
7.Serve hot with rice or bread.
