Ingredients

5 Japanese eggplants , 340 g ( we ca n't get Japanese , so I just use the big , fat purple ones ! )
3 green peppers
4 tablespoons sesame oil
2 1/2 tablespoons miso
1 tablespoon sugar
2 tablespoons mirin
2 teaspoons sake
2 teaspoons dashi ( I make up instant according to the packets directions )

Instructions

1.Cut the eggplant into bite-sized pieces and soak in water.
2.Remove the seeds and cut the green peppers into bite-sized pieces.
3.In a small bowl, mix together the miso, sugar, mirin, sake, and dashi.
4.Heat sesame oil in a frying pan and sauté the eggplant until lightly brown.
5.Add the green peppers and continue to sauté until vegetables are cooked.
6.Reduce heat and add in the sauce mix.
7.Let the vegetables cook in the sauce for 1-2 minutes.
8.Turn off the heat and let the vegetables cool before serving.
