1 lb whole wheat angel hair pasta
grated cheese , is optional and must be counted ( optional )

Instructions

6.Once the pasta is cooked, drain and divide it amongst four plates.
7.Top each serving of pasta with the eggplant and tomato sauce mixture. Optional: sprinkle grated cheese over the top.
