Ingredients

3 cups flour

1 teaspoon rum extract
1 cup heavy cream , whipped to stiff peaks
1 -2 tablespoon chocolate sprinkles ( optional )

Instructions

1.Preheat the oven to 350°F (180°C). Grease and flour a 9-inch springform pan.
2.In a medium bowl, whisk together flour, baking powder, and salt. Set aside.

4.Add vanilla and eggs, one at a time, to the butter mixture, beating well after each addition.
5.Gradually add the dry ingredients to the butter mixture, beating until just combined.

7.Pour the batter into the prepared pan and bake for 35-40 minutes until a toothpick inserted into the center comes out clean.
8.In a saucepan, whisk together 2/3 cup milk, sugar and flour until smooth. Cook over medium-high heat, whisking constantly, until thickened and bubbly, about 3 minutes.
9.Remove from heat. In a small bowl, whisk together the remaining 1/2 cup milk, egg yolk, and rum extract. Gradually whisk milk mixture into the saucepan with the flour mixture. Cook over medium heat, whisking constantly, until mixture thickens, about 5 minutes. Remove from heat and let cool to room temperature.
10.Once the cake has cooled, remove from the pan and transfer to a serving platter.
11.Spread the cooled eggnog mixture over the top and sides of the cake.
12.Top with whipped cream and chocolate sprinkles (if using).
13.Serve and enjoy!
