Ingredients

3 large zucchini , trimmed and cut lengthwise into long strips
2 tablespoons olive oil
1 onion , chopped
2 cloves garlic , chopped
1 cup seasoned bread crumbs
1 cup grated Parmesan cheese
1 tablespoon Italian herb seasoning
3 cups tomato sauce
1/4 cup grated Parmesan cheese , or as needed ( optional )

Instructions

1.Preheat oven to 350 degrees F (175 degrees C).
2.Place zucchini strips onto paper towels and sprinkle with salt to draw out excess moisture. Leave for 15 minutes.
3.In a pan, heat olive oil over medium heat and cook onion and garlic in the oil until onion is softened. Add bread crumbs, 1 cup Parmesan cheese, Italian seasoning and mix. Pour tomato sauce and stir.
4.Spread tomato mixture on the bottom of an 8-inch square baking dish. Layer zucchini, tomato sauce, and Parmesan cheese until all ingredients are used up, ensuring that the top layer is cheese.
5.Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake until cheese is browned and bubbly, for an additional 15 minutes.
