Ingredients

3 tablespoons unflavoured gelatin
1 cup water , divided
2/3 cup white corn syrup
2 cups sugar
1/4 teaspoon salt
1 tablespoon orange extract
1 tablespoon lemon extract
1 tablespoon yellow food coloring ( optional )
1/2 cup icing sugar ( you 'll only need about half this to coat )
1/2 cup cornstarch ( you 'll only need about half this to coat )

Instructions

1.In a large mixing bowl, sprinkle gelatin over 1/2 cup cold water letting it rest for 10 minutes.
2.In a medium saucepan, mix together the sugar, corn syrup, salt and remaining 1/2 cup water.
3.Bring the mixture to a boil over medium heat, stirring until sugar dissolves.
4.Raise heat to high and do not stir mixture while cooking, continuing to boil until a candy thermometer reads 240F.
5.Remove from heat and, with the mixer running on low speed, pour the hot syrup mixture slowly down the side of the mixing bowl.
6.After all of the syrup is added, increase the speed to high and continue mixing until the mixture is very thick and has nearly tripled in volume.
7.Add in the extracts and food coloring and mix until everything is incorporated.
8.Prepare a 9 x 13 inch pan by lining the bottom and sides with aluminum foil and sprinkling the cornstarch and powdered sugar on top.
9.Grease your hands and the foil. Pour the mixture into the pan and smooth the top.
10.Allow the marshmallows to rest uncovered for at least 8 hours or overnight.
11.Remove the marshmallows from the pan and slice them into small pieces with a sharp knife.
12.Coat the marshmallows in the cornstarch mixture and shake off the excess.
