Ingredients

1 lb ground pork , cooked and drained of grease
1 beaten egg
3 -5 stalks green onions , chopped
1 teaspoon minced garlic
1 bunch of lark bean thread noodles ( soak in hot water for 10 minutes then cut with scissors until the noodles are small pieces )
1/2 cup fresh bean sprout
soy sauce
fish sauce ( optional )
1 package egg roll wrap
oil ( for frying )
salt and pepper

Instructions

1.In a large skillet, cook the ground pork over medium-high heat until browned and cooked through. Drain any excess grease and transfer the pork to a large bowl.
2.Add the beaten egg, chopped green onions, minced garlic, lark bean thread noodles, bean sprouts, soy sauce and fish sauce (if using) to the bowl with the cooked pork. Mix everything together until well combined.
3.Heat a large pot of oil over medium-high heat. While the oil is heating up, start wrapping the egg rolls.
4.Take an egg roll wrap and lay it out in front of you with one corner pointing towards you. Place about 1/4 cup of the pork mixture onto the bottom half of the wrapper. Roll the bottom corner up over the pork mixture, tucking it in tightly. Fold in the left and right corners towards the center. Roll the egg roll up tightly, then seal the top corner with a bit of water to help it stick.
5.Once the oil is hot (around 375°F), carefully lower the egg rolls into the oil using tongs or a slotted spoon. Fry for about 3-4 minutes on each side, or until golden brown and crispy.
6.Remove the egg rolls from the oil with tongs or a slotted spoon and drain on a paper towel-lined plate. Serve hot with sweet chili sauce or soy sauce for dipping.
