Ingredients

6 eggs
1/2 pint milk
2 medium onions
1 inch ginger
4 green chilies
2 tablespoons ghee or 2 tablespoons oil
salt
1/2 teaspoon garam masala
fresh coriander leaves , washed , drained and chopped , to garnish

Instructions

1.Hard boil 6 eggs and cut them in half. Set aside.
2.In a blender, blend 2 medium onions, 1 inch ginger, and 4 green chilies into a paste. Set aside.
3.Heat 2 tablespoons of ghee or oil in a pan on medium heat. Add the onion paste and sauté until golden brown.
4.Add 1/2 pint of milk to the pan and stir until well combined.
5.Add salt to taste and 1/2 teaspoon of garam masala.
6.Add the boiled eggs to the pan and stir gently until coated with the masala sauce.
7.Simmer for 5-10 minutes, until the sauce thickens to your desired consistency.
8.Garnish with fresh coriander leaves and serve hot with roti or rice.
