Ingredients

6 eggs
1/2 cup small shrimp , shelled
1 slice pork shoulder , shredded ( or use 1 piece of sausage , diced )
1 sweet onion , shredded
oil ( for frying )
1 piece canned bamboo shoot , shredded thinly ( optional )
2 -3 pieces canned shiitake mushrooms , shredded thinly and cut into smaller pieces ( optional )
3/4 teaspoon salt
1/2 teaspoon fine sesame oil
1/2 teaspoon msg or 1/2 teaspoon sugar
1/3 teaspoon dark soya sauce
Egg Fu Yong I is a classic Chinese staple food that has been around since the 1930s. It is simple, delicious, and perfect for a quick meal. This dish is a vegetable-stir-fry omelet with pork and shrimp; you can customize the ingredients to your palate. Instructions

1.Beat eggs in a mixing bowl. Add shrimp, pork or sausage, onion, bamboo shoots and shiitake mushrooms and mix all together.
2.Add salt, sesame oil, MSG or sugar and dark soy sauce to the mixture and stir thoroughly.
3.Heat oil in a medium frying pan (enough to shallow-fry over medium heat).
4.Scoop out a ladle of the mixture, pour into the oil and shape it into a round (or oval) omelet.
5.Fry until golden brown, turn over and fry again until fully cooked.
6.Dish up and drain excess oil.
7.Aim for two omelets per person.
8.In a small saucepan, heat and stir 1/4 cup water, 1 tablespoon soy sauce, 2 teaspoons sugar, 1 tablespoon cornstarch until sauce thickens. Pour the gravy over the omelet and serve hot.
