Ingredients

4 lbs beef roast ( eye of the round )
1 can jellied cranberry sauce ( 398 mls , or any type or size )
1/4 cup soya sauce
2 green onions , finely chopped
1 teaspoon ground ginger

Instructions

1.Preheat oven to 375°F.
2.In a small bowl, mix together the jellied cranberry sauce, soya sauce, green onions, and ginger.
3.Place the beef roast into a roasting pan and brush the cranberry mixture over the top of the roast.
4.Roast the beef for approximately 90 minutes or until the internal temperature reaches 145°F for medium-rare or 160°F for medium doneness. Cover with foil and let it rest for about 10 minutes before slicing.
5.Serve and enjoy!
