Ingredients

1 1/2 cups rolled oats
1 cup all-purpose flour
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon salt
1 cup cold butter , cut into 16 pieces
2 eggs , lightly beaten
1 cup dried currant
1 cup candied cherry , rinsed in hot water , thoroughly drained and finely chopped
1 cup shredded coconut ( or flaked )
2 cups chopped walnuts
2 tablespoons finely chopped crystallized ginger
1/2 cup butter , melted and cooled
1/2 cup lyle 's golden syrup
3 eggs
1 cup confectioners ' sugar
1 tablespoon lyle 's golden syrup
1 -2 tablespoon orange juice or 1 -2 tablespoon milk
Edinburgh Squares are a delicious dessert that originated in the UK. These delicious squares are made with a mixture of oats, flour, sugar, spices and nuts. They are then topped with a sweet glaze and served. Perfect for any dessert table or as a sweet snack on the go!

Instructions

1.Preheat oven to 350°F.
2.Line a 9x13 inch baking pan with parchment paper.
3.In a large bowl, mix together the oats, flour, sugar, cinnamon, ginger and salt.
4.Cut in the butter until crumbly.
5.Mix in the lightly beaten eggs.
6.Stir in the currants, candied cherries, coconut, chopped walnuts and crystallized ginger.
7.Stir in the melted butter and golden syrup until well mixed.
8.Pour into prepared pan and press down firmly.
9.Bake for 30-35 minutes or until golden brown.
10.Let cool in pan for 10-15 minutes before removing and cutting into squares.
11.In a small bowl, mix together the confectioners' sugar, golden syrup and orange juice or milk until smooth.
12.Drizzle over cooled squares and serve.
