Ingredients

1/2 pint double cream
1 ounce caster sugar ( fine granulated )
2 ounces macaroons
almond essence
drambuie
1 ounce sliced almonds
Edinburgh Fog is a creamy and sweet cocktail perfect for those looking to indulge in something a little special. It is said to have originated in Scotland, initially made with just macaroons and whiskey, but this adapted version includes cream, caster sugar, a splash of almond essence and sliced almonds. The addition of Drambuie, a Scottish liqueur, gives it a unique kick of flavour. This cocktail can be easily adapted to become a non-alcoholic drink by removing the Drambuie, making it perfect for all ages to enjoy.

Instructions

1.Whip the double cream and sugar together in a mixing bowl until thick.
2.Crush the macaroons into the mixture, stirring gently until blended well.
3.Add a couple of drops of almond essence and a generous splash of Drambuie, stir it well.
4.Spoon the mixture into a pretty glass, top with the sliced almonds and chill in the fridge for an hour or two.
5.Once chilled take out from the fridge, decorate with extra almond shavings and serve.
