Ingredients

1/2 cup edamame ( shelled )
1/2 cup broccoli stem ( peeled & chopped )
2 avocados
1 lemon , juice of
1 lime , juice of
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1/4 teaspoon cumin
1/4 teaspoon chili powder
1/4 teaspoon garlic powder
1/4 cup yellow onion ( diced fine )
2 garlic cloves ( minced fine )
1 small fresh jalapeno ( minced fine remove seeds if you do n't want the heat . )
1 small tomatoes ( diced fine )
1 tablespoon fresh cilantro ( minced )

Instructions

1.Cook the edamame and broccoli stem in boiling water for 3-4 minutes until bright green and tender.
2.Drain and rinse the cooked vegetables under cold water.
3.In a mixing bowl, combine the avocado, lemon juice, lime juice, salt, pepper, cumin, chili powder, and garlic powder. Mash the mixture with a fork until it forms a chunky texture.
4.Add the cooked edamame and broccoli stem to the avocado mixture and mix well. Add in the diced onion, minced garlic, jalapeno, tomato, and cilantro.
5.Mix everything together until well combined and the edamame and vegetables are coated in the avocado mixture. Serve with chips, crackers, or fresh vegetables.
