Ecuadorean shrimp ceviche is a traditional seafood dish that originated in South America. It has since become popular in many other parts of the world due to its fresh and tangy flavors. This version of ceviche is made with fresh shrimp that are marinated in a mixture of citrus juices, tomatoes, peppers, and onions. The acidity of the citrus juices cooks the shrimp and infuses them with flavor. Oranges add sweetness to the dish and balance out the tanginess of the lime juice.

Instructions

1.Cut the tomato, jalapeno peppers, red bell pepper, and onion into small chunks.
2.In a large bowl, mix the chopped vegetables with the shrimp.
3.Add the lime juice, orange juice, tomato juice, sugar, salt, and 2-3 dashes of Tabasco sauce.
4.Stir to combine.
5.Cover the bowl and refrigerate for at least 1 hour or until the shrimp is opaque and cooked through.
6.When ready to serve, sprinkle chopped chives, scallions, and cilantro over the top of the ceviche.
