1 tablespoon fresh lemon juice

Instructions

1.Rinse quinoa in a fine-mesh sieve and drain well.
2.Heat olive oil in a large pot over medium heat.

4.Stir in diced potato, chopped bell pepper, coriander, cumin, oregano, and pepper to the pot. Cook until vegetables begin to soften for about 5-7 minutes.
5.Add the quinoa, water or vegetable stock, and chopped tomatoes to the pot and bring to a simmer.
6.Cover and simmer for 15 minutes.
7.Add the diced zucchini and simmer again until zucchini and quinoa are soft for another 5 minutes.
8.Stir in fresh lemon juice, season with black pepper and additional salt, if necessary. Serve hot with your favorite bread or crackers.
