1 1/2 liters beef stock

12 -15 homemade cheese & chive dumplings ( optional )

Instructions

1.Heat the oil in a large pot over medium heat.
2.Add the garlic, onions, celery, and carrots, and sauté for 5 minutes.
3.Add the beef, thyme, oregano, and allspice, and cook until browned.
4.Add the beef stock, cover, and simmer for 45 minutes.
5.Add the potatoes, cover and simmer for an additional 30 minutes or until they are tender.
6.Taste and adjust the seasoning, if necessary.
7.Optional: Drop dumplings by spoonfuls onto the top of the stew for the last 10-15 minutes of cooking, cover the pot tightly and do not lift the lid until done.
