800 g sweet potatoes ( unpeeled )
1/2 cup reduced-fat cream cheese
1 tablespoon flour
1 egg ( lightly beaten )
1 1/2 cups brown rice ( cooked see note )
65 g cheddar cheese ( cut into 10 x 1cm cubes )
olive oil flavored cooking spray

Instructions

1.Preheat the oven to 200°C.
2.Pierce the sweet potatoes with a fork and wrap them in foil. Roast them for 45-60 minutes until they are tender. Let them cool.
3.Cut each sweet potato in half and scoop out the inside into a bowl.
4.Mash the sweet potatoes with the cream cheese, flour, and egg until smooth.
5.Mix in the cooked brown rice.
6.Line a baking sheet with baking paper and spray it with cooking spray.
7.Divide the sweet potato mixture into 10 equal portions and form each portion into a ball.
8.Press a cube of cheddar cheese into the center of each ball and roll the ball to encase the cheese.
9.Place the balls on the baking sheet and spray them with cooking spray.
10.Bake for 15-20 minutes or until the rolls are golden brown on the outside.
