1 tablespoon coarse grain mustard
1 tablespoon brown sugar
5 tablespoons soy sauce
2 tablespoons apricot jam
3 garlic cloves , chopped and bashed a bit
3 tablespoons gingerroot , fresh , cut , chopped and bashed
1 teaspoon dried hot pepper flakes ( or to taste )
coarse black pepper , to taste
2 lbs pork spareribs ( or use enough for 4 people )

Instructions

1.Mix red wine vinegar, tomato ketchup, coarse grain mustard, brown sugar, soy sauce, apricot jam, garlic, gingerroot, hot pepper flakes, and black pepper in a bowl.
2.Cut and separate the spareribs if necessary. Rub the marinade onto both sides of the spareribs and place into a large plastic bag. Press out as much air as possible and refrigerate for at least 6 hours or overnight.
3.Preheat the oven to 350°F. Place the marinated spareribs in a baking dish or on a baking sheet, and bake for 60-75 minutes, turning over once during cooking.
4.Meanwhile, make the onion salad by thinly slicing a red onion and combining it with 1 tablespoon each of red wine vinegar and olive oil and a pinch of salt.
5.Once the spareribs have finished cooking, serve hot with the onion salad on the side.
