Ingredients

water , to knead
1 tablespoon ghee
1 onion , finely chopped
1 small tomatoes , finely chopped
1 teaspoon ginger , grated
4 green chilies , finely chopped

1 1/2 cups panir , crumbled ( cottage cheese )
salt

2 tablespoons coriander leaves , washed and finely chopped
oil or ghee , to shallow fry
Paneer wali rotis are a popular street food in many parts of India. Instructions

1.In a large bowl, combine the wheat flour, salt, and ghee. Add enough water to form a smooth dough. Knead well and rest for at least 10 minutes.
2.Meanwhile, in a pan, heat some oil and add onions. Saute onions until golden brown. Add ginger, tomatoes, green chillies, red chilli powder, and salt. Mix well and cook until the tomatoes are softened.
3.Add crumbled paneer and coriander leaves to the pan and saute for 1-2 minutes.
4.Divide the dough into equal portions. Roll each portion into a circle. Place some of the paneer mix on the circle. Fold the edges of the circle over the paneer mix and seal. Roll gently to make a roti.
5.Heat a tawa and cook the rotis until golden brown, flipping as needed. Serve hot with chutney or raita.
