Ingredients

200 g stoned dates
100 g shelled walnuts or 100 g shelled pecans
2 dessert apples , peeled , cored & chopped
3 tablespoons golden syrup
4 tablespoons cognac
100 g butter , cut into cubes
2 eggs , beaten
140 g soft brown sugar
170 g self-raising flour
1 teaspoon bicarbonate of soda
180 g soft brown sugar
100 g butter
6 tablespoons double cream
50 g walnuts , roughly chopped or 50 g pecans
The Easy Sticky Toffee, Apple and Cognac Pudding is a warm and comforting dessert that is perfect for cooler autumn weather. This pudding is made with stoned dates, shelled walnuts or pecans, dessert apples, golden syrup, cognac, butter, eggs, brown sugar, self-raising flour, bicarbonate of soda, and double cream. It is topped with a delicious toffee sauce made with soft brown sugar, butter, double cream, and either walnuts or pecans. This pudding can be enjoyed warm with cream or ice cream, and makes a delicious treat for the whole family to enjoy.

Instructions

1.Preheat the oven to 180°C.
2.Grease a 1.5-litre capacity pudding basin.
3.Put the dates in a food processor and process until they form a paste.
4.Add the walnuts or pecans and pulse briefly until coarsely chopped.
5.Stir in the apples, golden syrup, cognac, butter, eggs, soft brown sugar, self-raising flour and bicarbonate of soda. Mix until well combined.
6.Pour the mixture into the prepared pudding basin.
7.Cover the top of the pudding basin with a sheet of greased baking paper and secure with string.
8.Place the pudding basin in a roasting tin and pour boiling water into the roasting tin to come halfway up the pudding basin.
9.Bake for 1 1/2 hours, or until a skewer inserted into the centre of the pudding comes out clean.
10.While the pudding is baking, make the toffee sauce by heating the soft brown sugar, butter and double cream in a small saucepan until the sugar has dissolved.
11.Add the walnuts or pecans and stir to combine.
12.Turn the pudding out onto a serving plate and spoon over the toffee sauce. Serve warm with cream or ice cream.
