Ingredients

4 -5 lbs boneless pork loin roast or 4 -5 lbs pork butt
2 quarts water ( should cover meat ~ 2/3 )
8 teaspoons chicken bouillon
2 cans Rotel tomatoes & chilies ( or equivalent diced tomatoes & chilis )
8 -12 garlic cloves , minced ( or 1 - 1.5 tsp garlic powder )
1 teaspoon dry oregano leaves ( not ground )
1 teaspoon dried cilantro

Instructions

1.In a large pot, add water, chicken bouillon, Rotel tomatoes and chilies, garlic, oregano, and cilantro.
2.Add pork roast into the pot, cover and boil on low heat for 5 hours.
3.Remove the pork roast from the pot and shred the meat with two forks.
4.Place the shredded pork meat back into the pot and let it simmer for another hour.
5.Serve on a warm tortilla with toppings of your choice such as lettuce, tomato, avocado, and cheese.
