Ingredients

2 packages refrigerated buttermilk biscuits ( not the layered varieties )
Cornmeal for rolling
2 tablespoons olive oil
1 medium onion , finely chopped
1/2 medium Granny Smith apple , cut into small dice
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves
2 cups shredded meat from a rotisserie chicken
1 can crushed tomatoes
1/4 cup seedless raisins
1/4 cup chopped pimento-stuffed olives
2 large garlic cloves , minced
1/4 cup toasted slivered almonds
Salt and pepper , to taste
Olive oil , for brushing
Easy Picadillo Empanadas is a popular Latin-American dish. They are filled with a savoury and slightly sweet and savory filling made with shredded chicken, onions, raisins, olives and almonds, spiced with cinnamon and cloves. These empanadas are easy to make and great as an appetizer or a meal served with a side salad. The crust is made with biscuits, helping to give it a perfect crunch and balance the flavors of the filling. This dish can be traced back to Spain, but has evolved into many variations throughout the centuries, ending up in various Latin countries. Empanadas are popular in the Philippines, too, where the same filling can be wrapped in thin, crepe-like pancakes.

Instructions

1.Preheat oven to 375°F and line a baking sheet with parchment paper.
2.On a lightly floured surface, roll out each biscuit to a 5-inch round and place on the prepared baking sheet.
3.Heat olive oil in a large skillet over medium heat and cook onion and apple until tender, about 5 minutes.
4.Add cinnamon and cloves and cook for 1 minute.
5.Stir in chicken, crushed tomatoes, raisins, olives, and garlic and cook until heated through, about 5-7 minutes.
6.Stir in almonds and season with salt and pepper, to taste.
7.Spoon 2 to 3 tablespoons of the picadillo on one side of each biscuit and fold the other half over to enclose. Press the edges with a fork to seal.
8.Brush with olive oil and sprinkle cornmeal on top.
9.Bake for 15-20 minutes or until golden brown.

PROS

Easy to make and great as an appetizer or main dish.
These empanadas are perfect for parties and gatherings.

CONS

These empanadas are not particularly healthy, as they are made with buttermilk biscuits and olive oil.
They should be enjoyed in moderation as part of a balanced diet.

HEALTH & BENEFITS

This dish does offer some health benefits from the almonds which offer protein, healthy fats and fibre. The chicken is also a great source of protein. But as these empanadas are deep-fried, it does contain quite high levels of fat and calories.
