15 g butter , for greasing
500 g plums , halved & stoned
75 g plain flour
50 g caster sugar or 50 g granulated sugar
200 ml creamy coconut milk
50 ml skim milk
3 large eggs
1 teaspoon vanilla extract
1 tablespoon desiccated coconut

Instructions

1.Preheat the oven to 180°C or 160°C fan.
2.Grease a 24cm ovenproof dish with butter and add the halved plums gently.
3.In a bowl, mix the flour and sugar together until well combined.
4.Add the creamy coconut milk, skim milk, eggs and vanilla extract with continuous whisking until mixture becomes smooth and free of any lumps.
5.Pour the mixture over the plums in the ovenproof dish and sprinkle desiccated coconut over
6.Bake in the preheated oven for 45 minutes or until the top is golden brown and the clafoutis set.
7.Remove from the oven and let it cool a bit for a few minutes before serving warm.
