A simple yet delicious cake, the orange and poppyseed cake is a classic recipe that you shouldn't miss. It is widely consumed because of its versatility, making it a perfect treat for family gatherings, parties or a simple tea time snack. The tangy, citrus taste of the oranges combines beautifully with the crunch of the poppy seeds, making it an attractive and tasty delight. This cake is perfect for gluten-free eaters wanting a little sweet indulgence without the gluten.

Instructions

.Preheat the oven to 160°C. Grease and line a 20cm cake tin.
.In a food processor, blend the roughly chopped orange until it forms a coarse paste.
.Add the melted butter, almond meal, caster sugar, poppy seeds and eggs into the food processor. Blend until the mixture is well combined.
.Pour the cake mixture into the prepared tin and bake for around 1 hour, or until a skewer inserted comes out clean.
.While the cake is in the oven, make the syrup. Cut the skin off the remaining orange and slice it into thin circles that you'll later use to decorate the cake. Squeeze the juice from the orange into a saucepan.
.Add the water and white sugar to the saucepan with the orange juice. Cook over low heat, stirring until the sugar has dissolved. Increase to high heat and let boil for 4-5 minutes, or until the syrup has thickened.
.Once the cake is done and cooled for a while, pour over the orange syrup. Use the orange slices to decorate the cake, sprinkling with sufficient icing sugar.
.Serve the cake with a dollop of pure cream.
