Ingredients

3 cups masa harina
1 tablespoon salt
2 cups warm water , or as needed
1 quart oil for frying
Sopes are a popular Mexican street food that can be enjoyed any time of day. These thick, fried disks are made with masa harina, a type of corn flour, and can be topped with anything from refried beans and cheese to meat and salsa. Because they are a handheld food, they are perfect for a quick lunch or dinner. Sopes are also a great way to use up leftover ingredients you may have in your fridge.

Instructions

1.Preheat the cooking oil in a large, deep pan or deep fryer to 375°F (190°C).
2.In a mixing bowl, combine masa harina and salt. Gradually add in the warm water, mixing until you get a smooth dough.
3.Divide the dough into golf-sized balls. Roll each piece into a ball, then flatten with your hands to create a thick disk with raised edges.
4.Set the disks in the hot cooking oil and fry until golden brown and crispy, about 3 minutes per side.
5.Remove from the oil and place on paper towels to drain.
6.Once the sopes have drained, use a spoon to make an indentation in the center of each.
7.Fill the indented area with your preferred toppings, such as refried beans, cheese, meat, lettuce, and salsa.
8.Serve hot and enjoy!
