Ingredients

1 quart water
2 1/2 lbs boneless pork butt shank steaks , trimmed and cut into 3/4 `` cubes
1 can stewed tomatoes
1 medium onion , chopped
1 can white hominy , drained
1 1/4 cups green chilies or 1 1/4 cups red chilies , chopped
1/2 teaspoon dry oregano
2 garlic cloves , crushed
salt and pepper
12 corn tortillas

Instructions

1.Add all the ingredients except tortillas and give it a gentle stir.
2.Cover the pot and cook on high for about 4 hours or low for 8-9 hours, or until the pork is tender and shreds easily.
3.During the last hour of cooking, take out the pork cubes from the pot and shred them using a couple of forks.
4.Return the shredded pork to the pot and give it a good stir.
5.Taste for seasoning and adjust as required.
6.Meanwhile, cut tortillas into strips. Heat oil in a shallow pan and fry the tortilla strips until golden brown and crispy. Drain on a paper towel.
7.Serve the soup hot topped with crispy tortilla strips, cilantro and a squeeze of fresh lime juice.
