Ingredients

2 lemons , juice of
2 1/2 lemons , zest of , finely grated
50 g butter ( the creamier the better )
225 g caster sugar
1/2 teaspoon vanilla sugar
3 large free-range eggs , lightly whisked
3 small passion fruit

Instructions

1.Prepare a double-boiler, ensuring that the water does not touch the bottom of the bowl.
2.In the bowl, mix together the lemon juice, zest, butter, caster sugar, and vanilla sugar until well combined.
3.Add in the lightly whisked eggs and whisk until smooth.
4.Cook the mixture over the double-boiler, stirring continuously, until it thickens and coats the back of a spoon.
5.Remove from heat and stir in the pulp of the passion fruits.
6.Allow to cool completely before transferring to an airtight container and refrigerating until required.
