Coq au Vin is a classic French dish that originated in the Burgundy region. Traditionally, this dish was made with braised rooster or rooster wine. It was heavily seasoned, as salt acted as a preservative. In modern times, coq au vin is made using chicken cut into pieces and vegetable, simmered in wine and broth with the addition of mushrooms and onions. This recipe, however, uses a kosher twist and is perfect for those who observe Kosher laws. You can enjoy this dish with rice, noodles or fluffy potatoes, whichever you prefer.

Instructions

1.Preheat oven to 350°F/180°C.
2.In a deep skillet, heat the olive oil over medium-high heat.
3.Brown the chicken pieces on all sides until golden-brown. Salt and pepper them as they brown.
4.Add the whole mushrooms, garlic clove, and peeled onions. Cook while stirring for 5 minutes until the vegetables are soft and the flavors fuse.
5.Add the bouillon cubes, kosher red wine, and water. Simmer together without stirring until the liquids begin to bubble.
6.Allow the skillet to cook in the preheated oven for 45 minutes.
7.Optional: chop up fresh parsley and sprinkle it over the Coq Au Vin before serving.
