Instructions

1.In a large mixing bowl, beat the eggs and sugar until light and fluffy.
2.Add the vegetable oil, vanilla extract and orange juice, continue mixing until well combined.
3.In a separate bowl, whisk together the flour and baking powder.
4.Slowly add the dry ingredients to the wet ingredients, stirring until just combined to form a dough.
5.Wrap the dough in plastic wrap and refrigerate for at least 1 hour or overnight.
6.Preheat the oven to 350°F and line a baking sheet with parchment paper.
7.On a lightly floured surface, roll out the dough to a 1/8-inch thickness.
8.Use a round cookie cutter or the rim of a drinking glass to cut circles from the dough.
9.Place a small spoonful of fruit preserves in the center of each circle.
10.Pinch the edges of the circle to form a triangle, leaving a small opening at the top for the fruit preserves to show through.
11.Place the triangles on the prepared baking sheet and bake for 16-18 minutes, until the edges are lightly golden. Let cool for 5 minutes before transferring to a wire rack to cool completely.
