Ingredients

1 lb ground beef or 1 lb boneless skinless chicken breast
1/4 cup chopped onion
1 teaspoon garlic powder ( I prefer fresh minced )
1 tablespoon Worcestershire sauce
1 can tomato sauce
1 teaspoon paprika
1 teaspoon oregano
2 teaspoons chili powder ( more or less for your taste )
1/2 teaspoon cumin
1/2 teaspoon black pepper
3 cups shredded cheese ( I like the jack or cheddar combos )
1 can enchilada sauce ( I prefer the green sauce )
olive ( optional )
12 corn tortillas

Instructions

1.Preheat the oven to 350°F (176°C).
2.In a large skillet, cook the ground beef or chicken until browned. Add in the onion and garlic and cook for an additional minute.
3.Add in the Worcestershire sauce, tomato sauce, and seasonings. Cook for 5 minutes.
4.In a separate shallow pan, heat the oil over medium heat. Fry the tortillas for 1-2 seconds until soft.
5.In a 9x13 inch baking dish, pour in half of the enchilada sauce. Coat each tortilla with the remaining enchilada sauce.
6.Divide the meat mixture evenly onto each tortilla and sprinkle with cheese. Roll the tortillas and place seam side down in the baking dish.
7.Pour any remaining enchilada sauce on top of the rolled tortillas. Add more cheese on top if desired.
8.Bake for 20-25 minutes until the cheese is melted and bubbly.
