1/2 lb dried scarlet runner beans
3 tablespoons olive oil
1 medium white onion , diced
2 large garlic cloves , minced
1 - 1 1/2 tablespoon curry powder ( homemade is best )
1/2 teaspoon chili powder
salt , to taste
pepper , to taste

Instructions

1.Sort and rinse the beans in a colander
2.Preheat your oven to 350°F
3.In a large oven-safe pot or Dutch oven, heat the olive oil over medium heat
4.Add the onion and cook until softened, about 5-7 minutes
5.Add the garlic and cook for another minute or until fragrant
6.Stir in the curry powder and chili powder
7.Add the beans, salt, and pepper and enough water to submerge the beans
8.Bring the mixture to a simmer
9.Cover the pot and transfer to the oven
10.Cook for 2-3 hours or until the beans are tender, adding more water if necessary
11.Enjoy warm as a side or main dish
