1/2 teaspoon fish sauce or 1/2 teaspoon soy sauce
1 teaspoon dried parsley
1 teaspoon dried oregano
salt and pepper

Instructions

1.Cut pumpkin and eggplants into medium-sized chunks.
2.Cut bok choy into small pieces and quarter tomatoes.
3.Heat oil in a non-stick pan over high heat.
4.Add pumpkin and eggplants to the pan. Cook for 5 minutes or until slightly softened.
5.Add garlic, ginger, parsley, oregano, and salt and pepper. Stir well.
6.Turn down heat to medium and add sweet chili sauce, fish sauce, and water. Mix well.
7.Add bok choy and tomatoes. Cook for a further 5 minutes or until vegetables are cooked through.
8.Serve hot with rice or noodles.
