Ingredients

2 boneless skinless chicken breasts
3 tablespoons olive oil

12 new potatoes
3 1/2 ounces goose fat or 3 1/2 ounces other fat

3 ounces salted butter , softened
1 1/2 tablespoons finely chopped fresh sage

Instructions

1.Preheat oven to 375°F (190°C).
2.Wash and cook the potatoes for 10-15 minutes until they are tender but still hold their shape.
3.Drain and let cool.
4.In a large skillet, heat 2 tablespoons of olive oil over medium-high heat and season chicken breasts with salt and black pepper. Cook for about 3 minutes on each side.
5.Add chicken stock, red wine, cornstarch, sugar into the pan, and stir gently. Bring it to a boil and let it simmer for 2-4 minutes until sauce has thickened and chicken is fully cooked.
6.In the meantime, heat goose fat or other fat, and the remaining olive oil in another skillet. Add onions and cook until they are translucent. Then, add the potatoes and sauté them for 5-7 minutes until they are golden and crispy. Finally, add asparagus and fresh peas to the same skillet and cook for another 3-5 minutes until they are tender but still green.
7.Take off heat, and stir in salted butter and chopped sage.
8.Transfer the chicken and sauce to a baking dish and spoon the vegetables around the chicken.
9.Bake in the preheated oven for 10-15 minutes until everything is heated through. Serve hot.
