1 pound skinless , boneless chicken breasts , cut into strips
1 packet fajita seasoning
1 red bell pepper , cut into thin strips
1 green bell pepper , cut into thin strips
1 poblano pepper , cut into thin strips
1 large onion , cut into thin strips
1 can fire roasted diced tomatoes
1 can seasoned black beans
1 can chicken broth
1 dash hot sauce
salt and pepper to taste

Instructions

1.In a large pot or dutch oven, heat 2 tbsp of vegetable oil over medium-high heat.
2.Add chicken strips and sauté for 5-7 minutes, or until browned.
3.Toss the fajita seasoning over the chicken and mix well.
4.Add the red, green and poblano peppers, onion, fire roasted diced tomatoes, black beans, chicken broth, dash of hot sauce, salt, and pepper. Stir well.
5.Cover the pot and let simmer for 30-40 minutes, or until the peppers and onions are soft.
6.Serve hot!
