Instructions

1.Preheat your oven to 400°F (200°C).

3.Add the whole-wheat elbow macaroni to the pot and stir to combine. In a separate bowl, whisk together the tapioca starch and cream cheese until smooth. Add this mixture to the pot and stir until well combined.
4.Beat the eggs in a separate bowl and add them to the pot, stirring until everything is well mixed.
5.Transfer the mixture to a casserole dish and sprinkle the grated cheddar cheese and breadcrumbs over the top. Bake in the oven for 20-25 minutes or until golden brown.
