6 uncooked lasagna noodles
1 container fat-free ricotta cheese
1 -2 cup sliced/chopped raw vegetables ( I 've used zucchini , bell peppers , mushrooms , onions )
1 package shredded lowfat mozzarella cheese

Instructions

1.Preheat the oven to 375°F.

4.Spread half of the ricotta cheese on top of the noodles.
5.Add a layer of sliced vegetables and sprinkle with shredded mozzarella cheese.
6.Repeat layers with sauce, noodles, ricotta cheese, vegetables, and mozzarella cheese until all ingredients are used.
7.Cover the baking dish tightly with foil and bake for 45-50 minutes.
8.Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and lightly browned.
