Ingredients

10 ounces frozen chopped spinach
15 ounces diced tomatoes
2 diced onions
2 minced serrano chilies
1 teaspoon cayenne powder
1/4 teaspoon turmeric
1/4 teaspoon tamarind paste
1/2 - 1 cup water
1 - 1 1/2 teaspoon salt
2 tablespoons oil
1 teaspoon channa dal
1 teaspoon black mustard seeds
1 teaspoon Urad Dal ( split white )
1/2 teaspoon cumin seed
1/8 teaspoon methi seeds
1/4 teaspoon hing
1/4 teaspoon ginger powder
16 curry leaves
This easy boiled spinach curry is a delicious South Indian dish that is often eaten as a side dish or with rice or roti. Instructions

1.Heat oil in a pan and add black mustard seeds, urad dal, channa dal, cumin seeds, methi seeds and hing.
2.Add onions and saute until golden brown.
3.Add serrano chilies and curry leaves and cook for a minute.
4.Add spinach, diced tomatoes, salt, cayenne powder, turmeric and ginger powder.
5.Cook for 5-7 minutes until spinach is soft.
6.Add tamarind paste and water, mix well and let it simmer for 5-7 minutes until the curry thickens.
7.Serve hot with rice or roti.
