Ingredients

1 lb eggplant
1 teaspoon turmeric
2 -3 cups water
2 tablespoons oil
2 teaspoons split white Urad Dal
1 teaspoon black mustard seeds
2 dried red chilies , broken into pieces
12 curry leaves
1 teaspoon ginger paste
1/2 teaspoon hing
1 can black-eyed peas , rinsed and drained
3 green serrano chilies , slit half-way up
1 teaspoon salt
1 tablespoon chopped fresh cilantro

Instructions

1.Peel the eggplant and cut it into small pieces.
2.In a large saucepan, add the eggplant and turmeric along with 2 cups of water. Mix well and bring to a boil.

4.In a separate pan, heat oil over medium heat.
5.Add urad dal, mustard seeds, dried red chilies, and curry leaves. Fry for a minute until mustard seeds begin to pop.
6.Add ginger paste and hing. Fry for a few seconds and add the boiled eggplant mixture.
7.Add black-eyed peas, serrano chilies, and salt. Mix everything and simmer for 5-7 minutes over low heat.
8.Garnish with chopped cilantro and serve hot with rice or bread.
