Pickled onions are a classic condiment in British pubs and are often served alongside a cheese board or with scotch eggs. They are also a popular addition to sandwiches and wraps, adding a tangy crunch to every bite. This recipe provides a simple and traditional way to make pickled onions at home, using just a few ingredients. The longer the onions are left to mature, the softer and more flavorful they become, making them a delicious addition to any meal.

Instructions

1.Begin by placing your onions in a bowl of cold water for an hour to soften the skin and make them easier to peel.
2.After an hour, drain the onions and use a small knife to remove the top and tail of each onion and then make a shallow cut down the side of the onion skin, taking care not to cut too deep into the onion itself. This process will make the onions easier to peel.
3.Next, bring the malt vinegar and pickling spices to a boil in a large saucepan, then remove from heat and allow to cool.
4.Pack the onions into sterilized jars and pour in the cooled pickling vinegar, ensuring the onions are fully covered with the vinegar mix.
5.Seal the jars with their lids and place in a cool, dark place for 2-3 months for best results.
