1 1 cup pistachios or 1 cup almonds
dried black raisins
vanilla essence
2 1/2 cups sugar
1 pinch cardamom powder
2 cups milk
Kulfi is a popular Indian dessert that is similar to ice cream but does not require an ice cream maker. This easy and simple kulfi recipe is made with ground pistachios or almonds, dried black raisins, vanilla essence, sugar, cardamom powder, and milk. The mixture is slow-cooked until well combined and then poured into moulds or a shallow container and frozen for at least 6 hours or overnight. Instructions

1.In a blender or food processor, grind the nuts and dried raisins into a coarse powder.
2.In a large pot, heat the sugar over medium-high heat until it melts and caramelizes.
3.Slowly stir in the milk, cardamom powder, and ground nut mixture until well combined.
4.4.Remove from heat and let cool for a few minutes.
5.Stir in the vanilla essence.
6.Pour the mixture into kulfi moulds or a shallow container.
7.Freeze for at least 6 hours or overnight.
8.To unmould, dip the bottom of the moulds into hot water for a few seconds and then gently ease out the kulfi with a knife.
