6 -7 sheets phyllo dough
1 1/2 cups of cooked arborio rice
2 cups fresh ricotta cheese

Instructions

1.Preheat your oven to 350°F (180°C).
2.In a small saucepan, heat the rum until it begins to simmer. Add the golden raisins and stir until all of the raisins are coated in rum. Set aside and let soak for at least 10 minutes.
3.In a large mixing bowl, beat the mascarpone cheese and powdered sugar together until smooth.
4.Beat in the eggs until well combined.
5.Add the rice, ricotta cheese, vanilla extract, melted butter, and orange zest to the mixing bowl and stir until the ingredients are evenly combined.
6.Butter a 9-inch (23-cm) pie dish. Layer the phyllo dough into the pie dish, staggering each sheet so that it hangs over the edge of the dish. Use a pastry brush to coat each sheet of phyllo dough with melted butter after layering it in the dish.
7.Pour the rice mixture into the dish.
8.Use a slotted spoon to remove the raisins from the rum, then sprinkle them on top of the rice mixture.
9.Fold the phyllo dough over the top of the pie. Brush the top of the phyllo dough with butter.
10.Bake for 45-50 minutes or until the phyllo dough is golden brown.
11.Let cool for at least 10 minutes before dusting the top with powdered sugar and serving.
